Ingrédients

  • 200 g pasta (penne or linguine)
  • 300 g fresh or frozen shrimp
  • 200 g cherry or peeled tomatoes
  • 1 clove garlic sliced
  • 2 c.s extra virgin olive oil
  • 1 c.s lemon juice
  • to taste salt
  • to taste pepper
  • a pinch paprika
  • to garnish fresh parsley
  • 100 ml dry white wine (Sauvignon Blanc or Vermentino)

Instructions

  • Rinse the shrimp thoroughly under cold water, peel them, and remove the black intestine.
  • Marinate the shrimp in olive oil, a little lemon juice, salt, pepper, and paprika for 15 minutes.
  • Cook the pasta al dente in a large amount of salted water.
  • In a frying pan, heat a drizzle of olive oil and add the sliced garlic.
  • Add the marinated shrimp and cook for 1 to 2 minutes on each side.
  • Deglaze with a splash of dry white wine.
  • Incorporate the chopped fresh parsley to garnish.
