  • 300 g pasta quality spaghetti or linguine
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic minced
  • 50 g parmesan grated (optional but recommended)

  • to taste salt

Instructions

  • Thinly slice the fresh courgettes using a mandoline.
  • Sauté the courgettes in a pan with extra virgin olive oil.
  • Add the minced garlic towards the end of cooking to avoid burning.
  • Add salt lightly, but wait until the end of cooking.
  • Serve hot, garnished with grated parmesan and herbs.
  • Enjoy with a light green salad and lemon vinaigrette on the side.
