Ingrédients

  • 12 units lasagna sheets
  • 2 medium eggplants
  • 2 medium zucchini
  • 2 red bell peppers
  • 2 onions
  • 500 g homemade tomato sauce (or jarred)
  • 2 balls mozzarella
  • 4 tablespoons olive oil
  • to taste fresh basil leaves
  • to taste salt and pepper

Instructions

  • Preheat the oven to 180°C.
  • Sauté the vegetables (eggplants, zucchinis, bell peppers, onions) in a skillet with olive oil until slightly golden.
  • Spread a thin layer of tomato sauce at the bottom of the dish.
  • Lay a row of lasagna sheets on top of the sauce.
  • Add a generous layer of vegetables.
  • Repeat steps 3 to 5 until all ingredients are used, ending with a layer of tomato sauce.
  • Slice the mozzarella and distribute it evenly on top.
  • Bake the lasagna for about 30-40 minutes.
  • Broil the lasagna for the last 5 minutes to get a golden layer.
  • Let the lasagna rest for a few minutes before serving.
