- 12 units lasagna sheets
- 2 medium eggplants
- 2 medium zucchini
- 2 red bell peppers
- 2 onions
- 500 g homemade tomato sauce (or jarred)
- 2 balls mozzarella
- 4 tablespoons olive oil
- to taste fresh basil leaves
- to taste salt and pepper
Preheat the oven to 180°C.
Sauté the vegetables (eggplants, zucchinis, bell peppers, onions) in a skillet with olive oil until slightly golden.
Spread a thin layer of tomato sauce at the bottom of the dish.
Lay a row of lasagna sheets on top of the sauce.
Add a generous layer of vegetables.
Repeat steps 3 to 5 until all ingredients are used, ending with a layer of tomato sauce.
Slice the mozzarella and distribute it evenly on top.
Bake the lasagna for about 30-40 minutes.
Broil the lasagna for the last 5 minutes to get a golden layer.
Let the lasagna rest for a few minutes before serving.
