Ingrédients

  • Lasagna sheets (fresh or dry)
  • 1 zucchini
  • 1 red or yellow bell pepper
  • a handful of fresh spinach
  • 1 onion
  • 2 fresh tomatoes or 1 can of chopped tomatoes
  • homemade or store-bought béchamel
  • grated cheese (mozzarella, parmesan or other)

Instructions

  • Finely chop the zucchini and bell pepper.
  • Quickly sauté the spinach in a hot frying pan for 2 minutes.
  • Prepare the béchamel by melting butter, adding flour, then warm milk while stirring.
  • Add a pinch of nutmeg to the béchamel.
  • In a dish, start with a thin layer of béchamel.
  • Alternate layers: pasta, vegetables, béchamel, and grated cheese until all ingredients are used up.
  • Finish with a generous layer of grated cheese.
  • Cook in the oven at 180°C for 30 to 40 minutes.

Notes

Feel free to personalize the recipe with other vegetables according to the season. For a stronger flavor, add fresh herbs like basil or thyme. You can freeze the lasagna after preparation, just cover it and reheat it directly in the oven when you're ready to serve.
