A few days ago I got the idea of preparing a sweet focaccia, a focaccia with sugar , so to speak! And what a sight, really satisfied with the result ! I’m sure it will make you fall in love too. Recently I discovered that there is also the Alessandria sweet focaccia and the Genoese sweet focaccia : well, my version looks very much like it! In that case, olive oil is usedinstead of butter, but at the bottom of this recipe you will also find how to replace it!
But did you know that my sweet focaccia is a focaccia without dough ? I wanted the recipe to be really simple to make and therefore you will not need to knead either by hand or with the planetary mixer. All you need is a bowl and a fork ! In no time, you will have an enchanting soft sweet focaccia, with sweet dough. Are you ready to prepare the soft sweet focaccia? It is excellent both for breakfast and as a snack , the perfect homemade dessert, also to brighten up Sundays.
Sweet focaccia: recipe and preparation
420 g flour (half 00 and half Manitoba) 150 g milk 140 g of water
80 g sugar 50 g butter (melted) 10 g fresh brewer’s yeast
10 g honey (acacia, wildflower) 2 g salt For the surface
40 g butter (melted) 40 g sugar
How to make sweet focaccia
To prepare the sweet focaccia, a kind of leavening is created based on warm milk, honey and yeast. In this way, the leavening starts a little earlier and you will have a better result . Then the leavening of the dough and that in the pan will follow. But don’t worry it’s nothing difficult . The sweet focaccia recipe is very simple to make.
For this recipe, instead of 00 flour and Manitoba flour, you can directly use a medium strength flour W270-300 .
You can replace fresh brewer’s yeast with 3 grams of dry (dehydrated) brewer’s yeast.
Mix yeast, honey and milk – Sweet focaccia recipe
First, heat the milk slightly . In a large bowl , crumble the yeast, add the honey and pour the warm milk inside . Stir briefly with a fork, cover with cling film and leave to rest in the oven off with the light on (or leavening function) for 20 minutes .
Combine sugar and mix – Sweet dough
Melt the butter and let it cool.
After the time has passed, take the dough again and pour in the sugar and stir briefly to make it melt.
Also add the flour, water and melted butter . Stir with a fork to absorb the liquids.

Also add the salt (half a level teaspoon) and always mix with a fork. You will get a not very homogeneous and very soft dough . Everything is normal.
Cover with clean cream and let the sweet focaccia dough rest for 10 minutes .

Take the dough again and, with wet hands , bring one outer flap at a time towards the center . Continue doing this around the entire dough, 2 times . You can also use a tarot (always wet). You will see that the dough will gradually take shape. But don’t worry, it’s okay for it to stay soft. Cover with cling film and leave to rise in the oven off with the leavening function or with the light on for 2 hours .
After the time has elapsed, grease a 35 x 27 cm ovenproof dish . I use that of lasagna, but a not too large pan with high sides is also fine.
Pour the mixture into the pan and, with wet hands, spread it out using your fingertips . It doesn’t need to be perfect.
Pour 2 tablespoons of water on the surface , to give even more moisture during the leavening. Let it rise uncovered , always in the oven off with the light on, for 1 hour , inserting a saucepan of boiling water together to facilitate leavening.
Sweet focaccia rising
After this leavening, remove the sweet focaccia and turn on the static oven at 180 ° C
Pour the cooled melted butter (40 g) onto the surface .
With your fingertips create the classic dimples , without exaggerating, to maintain the beautiful leavening and not to ruin the beautiful bubbles that have formed. the entire surface with granulated sugar . When the oven has reached the temperature, bake the soft focaccia at 180 ° C for 25 minutes , always together with a saucepan of boiling water .
It will come beautifully golden and very soft , with a crust of sugar that is impossible to resist!
Once ready, cover with a clean cloth and let your sweet focaccia cool down. Then you can cut it into squares and enjoy it in all its Di lei goodness!

The sweet focaccia can be kept in its mold covered with cling film, at room temperature, for 2 days . Better still, already cut into pieces, inside a food-grade plastic bag (like freeze bags). The next day will be super soft and soft too !
