320 g pearl spelled (precooked) 250 g shrimp (or already cleaned shrimp)
3 courgettes (medium) 80 g spring onion
1 sprig parsley qb olio extravergine d’olive

Preparation of the spelled salad with shrimps

Prepare a pot of water for cooking the farro . Once it reaches a boil, add salt and pour the spelled. Cook following the instructions on the package : it can take from 10 to 20 minutes. Once ready, drain and let cool .
Cooking courgettes – spelled with shrimps
Meanwhile, cut the spring onion into rings and brown it over medium heat in a non-stick pan with 3 tablespoons of oil .
Wash and trim the courgettes . Cut them in half and then into rather thin slices . Place the courgettes in a pan, lightly salt and cook for 15 minutes , over medium heat, stirring occasionally. The first 10 minutes, cook with the lid on , then remove it and continue cooking.
Also add the shrimp rinsed under running water or the shrimp already cleaned in the same pan as the courgettes and cook for 5 minutes , stirring occasionally. Season with salt.
Combine the spelled – Spelled and shrimp salad recipe
Remove the pan from the heat, add the spelled and a drizzle of raw oil and mix everything together. Serve immediately in the various dishes, garnishing with chopped parsley .
