It is made in an instant, it is made up of many apples cut into very thin slices and very little dough , similar to that of crepes (it is a kind of batter with yeast), made with 2 eggs, a little sugar, a little flour and very little butter . The consistency? It’s a moist apple pie , similar to mineVegetarian apple pie (without eggs and butter), a very light and fragrant pie . To give just that apple pie flavor we like so much is also the lemon zest and a sprinkle of cinnamon . I also used Decorì’s “Il Classico vanigliato” baking powder , with instant leavening, to also give the scent of vanilla and for fabulous leavening of all my desserts and cakes.

Light apple pie: recipe and preparation
20 cm openable cake pan 900 gmele Golden
100 g latte 70 g 00 flour (Soft sweets Le Farine Magiche)
50 gzucchero 20 g butter (melted)
2 eggs (medium) 1 sachet of baking powder for cakes (Il Classico Decorì)
1 lemon zest (untreated)
to taste ground cinnamon lemon juice (1 lemon) 1 pinch of salt
to taste icing sugar (Decorì – to decorate)
Preparation of light apple pie (invisible apple pie)
To prepare the Invisible Apple Pie, first melt the butter in a saucepan and set aside.
Prepare the dough. Whip the eggs with the sugar and a pinch of salt , using the electric whisk briefly.
Add the milk , the Soft Sweets Flour, the Magic Flours with the yeast Il Classico Vanigliato Decorì , the grated rind of 1 lemon and the melted butter. Blend everything with a whisk until the mixture is rather liquid and homogeneous.
Weigh 900 g of apples : you will need 5 or 6 depending on the size. Peel them, cut them in half and remove the core . Slice them into thin slices using a mandolin or a vegetable slicer. The thinner they are, the more you will have a better result.
Sprinkle the apples with lemon juice , to prevent them from blackening and sprinkle with ground cinnamon , if you like (I love it!).
Pour the mixture over the apples and mix gently with a spatula, so that all the apples are covered.
Take a 20 cm springform pan and line it with parchment paper. Place a sheet of baking paper on the bottom of the open pan . Close it and cut out the excess paper with scissors. Apply on the edges of the strips of paper , making them adhere with a little butter spread on the edge itself.
Pour the mixture into the pan, pressing lightly on the surface and leveling.
Bake the light apple pie in a preheated static oven at 180 ° C for 45 minutes . Once ready, leave it in the oven for another 10 minutes . Then take out the invisible apple pie and let it cool completely to room temperature. It will.
