Eggplant meatballs with sauce: recipe and preparation
600 g aubergines 45 g of bread 40 g Parmigiano Reggiano DOP
30 g breadcrumbs 1 egg (medium) 10 basil leaves
340 g tomato puree
Half an onion 2 tablespoons extra virgin olive oil flour to taste 00 (for the breading)
salt to taste

Eggplant meatballs with sauce are placed in a pan, in the sauce, raw , without having to fry or bake them in the oven, which is why they are so light . To form the meatballs , the aubergines must be pre-cooked , in this way they will be soft and dry .

To prepare the light eggplant meatballs, dedicate yourself to cleaning the aubergines : wash them under running water, remove the stalk and cut them first into slices and then into cubes. Weigh 500 grams .

Mix all the ingredients with a spoon, until you get a homogeneous mixture .
Chop the onion and sauté it in a pan with 2 tablespoons of oil for a few minutes. Add the tomato puree , a few basil leaves and season with salt.
