Even the leavened braid with jam will give you a lot of satisfaction. I used apricot jam , but you can choose the flavor you prefer!
To prepare a perfect sweet braid, I used the flours of Farine Magiche , theDecorì Brewer’s Yeast (natural yeast), perfect for both sweet and savory preparations, and Decorì Sugar Grains , to make it even more cute and captivating .

Sweet braid with jam: recipe and preparation
For the dough:
175 g Manitoba flour ( 100% Manitoba The Magic Flours ) 175 g flour 00 140 g milk ( lukewarm ) 60 g butter ( melted )
50 g granulated sugar 1 egg ( medium ) 3 g dehydrated brewer’s yeast ( Decorì ) Half a vanilla pod
lemon zest ( half an untreated lemon ) 4 g salt to taste granulated sugar ( Decorì ) 250 g apricot jam 1 egg ( for brushing ) 3 tablespoons of milk
How to make the sweet braid
To make the sweet treccia, you will first need to prepare a leaven , so as to start the leavening a little earlier. Then follows the dough, the actual leavening, the formation of the brioche braid and, finally, the leavening of the cake already formed . The dough is convenient and quick to prepare , therefore, it is not that difficult.
You can replace dry (dehydrated) brewer’s yeast with 10 g of fresh brewer’s yeast , if you are used to using it.
Instead of using the two flours , you can directly use 350 g of W270 medium strength flour .
Heat the milk to warm it. Add the Decorì dry yeast and 1 tablespoon of sugar .
Mix milk, yeast and sugar
Cover with cling film and let it rest in the oven at 30 ° C for 20 minutes (oven off with light or leavening function).
Preparation of the leavening for the sweet braid
Melt the butter and set aside.
Put the sugar, the egg , the seeds extracted from half a vanilla bean , the grated zest of half a lemon and the melted butter in the mixer . Mix with the K or leaf beater at low speed .

Add the 100% Manitoba flour Le Farine Magiche and the 00 Dolci Soffici flour Le Farine Magiche , the leavened dough previously prepared and the salt .

Knead for about 5 minutes, at low speed , so that the mixture begins to string and detach from the sides of the bowl .
Remove the whisk and insert the dough hook . Let it work for 10 minutes, at medium speed , taking care to remove the dough from time to time.

Shape it into a ball and place it in a bowl lightly greased with oil. Cover with cling film and let it rise in the oven off with the light on or with the leavening function for 2 hours and 30 minutes , until doubled . The dough of the treccia brioches is ready!

After the time has elapsed, turn the dough over on the work surface and deflate the cloth with your fingertips. Roll it out to form a 30 x 40 cm rectangle . Divide the short edge into 3 parts , so as to obtain 3 horizontal strips of approximately 10 x 40 cm .
